Local Taste
• 1 cup fresh Maine wild blueberries
• 2-3 T. Maple syrup
• 2 T. butter
Mix the blueberries and the maple syrup together in a small saucepan. Cook on medium heat for 2 minutes until blueberries begin to soften and release juices. Turn off the heat and add butter. Let sit to thicken slightly and enjoy with your fresh popovers.
4 eggs, room temperature
1-½ cups whole milk, room temperature
¾ t. sea salt
1-½ cups all purpose flour
3 T. butter melted
1. Preheat oven to 450 degrees F. Butter popover pan.
2. Whisk the eggs, milk and salt together in a large mixing bowl until fully blended. Add the flour and melted butter. Let the batter rest while the oven preheats.
3. Place popover pans in the oven for 2 minutes.
4. Take popover pans out of the oven placing on trivets and pour batter in each opening filling to 3/4 full. Using a 4 cup glass measuring bowl w/ spout makes this super easy.
5. Place popovers on the bottom rack and bake for 18 minutes. Reduce temperature to 350 degrees F. and bake for another 5 minutes. They should have “popped” over the top of each opening and be a light golden brown.
6. Pierce the tops to release steam and serve with Blueberry Maple Syrup or honey butter.
Sargent Woods Cottage is a newly renovated 100 yr old cottage that was part of the quarrying and farming villages of Sound Village. The cottage sits next door to the historic Sound Schoolhouse.
